Cookies with a Citrus Tang

Lemon-glazed Butter Cookies

Preheat the oven to 180°C/350°F/Gas mark 4

Cream together the butter and 1/3 cup sugar until light and fluffy. Sift together the flour and cornstarch. Add to the butter mixture. Blend until the dough is soft.

Drop by teaspoonfuls onto ungreased baking sheet. Bake until very lightly browned, about 15 minutes. Glaze while still warm.

For the glaze, combine 2 1/2 cups sugar, melted butter, and lemon juice. While the cookies are still warm, place 1/2 teaspoon icing on each. The icing will melt. Cool the cookies completely on a wire rack.
