Bufton Cookies
- COOKIES:
- 100 grams white self-raising white flour
- 175 grams butter
- 100 grams rolled oats
- 100 grams caster sugar
- 2 tablespoons golden syrup/corn syrup
- 2 teaspoons milk
- 25 grams semolina
- pinch of salt
- 1 teaspoon bicarb.
- 1/2 teaspoon baking powder
- FILLING:
- 100 grams icing sugar/confectioners sugar
- 4 tablespoons butter
- 1 teaspoon coffee (decaff.)
- 1 teaspoon carob powder
- 1 teaspoon vanilla essence
Preheat the oven to 180C/350F/Gas mark 4
Cream the butter and sugar until light and fluffy. Add the oats, semolina, flour, syrup, salt and baking powder. Finally add
bicarb. and milk. Make small balls and place them on greased baking tray. Bake for 15-20 minutes. Cool.
To make the filling, cream the butter and sieved icing sugar together. Add the rest of the ingredients and mix well.
