Crisp Gingercookies

Preheat the oven to 180C/350F/Gas mark 4

Cream together the molasses, butter and brown sugar. Then mix in the remaining ingredients. Cover and refrigerate for 4 hours.

Roll the dough to paper thin (1/8 inch) thick on a floured board. Cut with floured 3 inch cutter, and place about 2 inches apart on a baking tray. Bake until light brown. Immediately remove from the baking tray and cool. Ice as below.

For the icing, mix the sugar, vanilla and salt. Stir in the single cream until the icing is smooth and of spreading consistency.
