Preheat the oven to 180°C/350°F/Gas mark 4
Cream together the sugars, butter and sour cream. Drain the crushed pineapple carefully and add to the miox. Sift together the flour, salt, soda, baking powder and add to the sugar mixture. Add the lemon essence and the walnuts.
Drop by teaspoonsful onto a greased cookie sheet and flatten with the bottom of a glass dipped in sugar. Bake for 12 min, or until golden brown. Cool on a wire rack.
