Eggless Drop Cookies

Cookies with Nuts and Seeds

Wholemeal Carrot Cookies (vegan)

Preheat the oven to 190°C/375°F/Gas mark 5

Combine the flour, baking powder, salt and oats and mix well. Stir in the seeds, nuts, raisins and carrots. Beat together the oil, vanilla and syrup. Stir into flour mixture.

Drop by teaspoons onto the greased baking tray, flatten slightly, compressing the dough so that the cookies hold together. Bake for 10-12 minutes until lightly browned. Let it stand for a few minutes on the baking tray then transfer to rack to cool. Makes about 40.
