Eggless Drop Cookies

Cookies with Nuts and Seeds

Tapioca Spice Cookies (vegan)

Preheat the oven to 200°C/400°F/Gas mark 6

Cream the oil, sugar and syrup together well. Sift together the flours, spices and salt. Stir into the creamed mixture. Add the currants and pecans. Mix well.

Drop 1-2 tablespoons of the dough onto lightly oiled cookie sheets, about 2"-3" apart. Bake for 9-12 minutes, until lightly browned but still soft. Cool on wire racks. The cookies will get crispy as they cool.
